What is Soup Curry?
A Hokkaido original
Soup curry is a Hokkaido specialty said to have been born in Sapporo in the 1970s. Unlike thick Japanese curry, it is a spiced, soupy broth served with large vegetables and chicken legs, eaten by dipping a separate bowl of rice.
The classic style
The standard is "chicken leg and vegetables": deep-fried seasonal Hokkaido vegetables with a fall-off-the-bone chicken leg. Most shops let you choose spice level, rice size and toppings.
Types of broth
Styles vary widely by shop — chicken/pork-bone classic, tomato-based, shrimp-stock, and Japanese-dashi or medicinal-herb versions.
